Jaggery

The village of Johri in Baghpat has many cottage factories which churn out fresh jaggery in small batches. There are various in house machineries, which have been  in place since the inception of these cottage factories. They also squeeze out fresh sugarcane juice to drink. The cottage factory is established near a sugarcane field, where they get their supply of sugarcane from. The open air factory forms for a place of community for the people. It is surrounded by many shade providing trees and it also acts as a place for community gathering, wherein, people lounge around in cots.
